INGREDIENTSThis makes about 12 small or 1 x 8 inch sized cheesecake

1.5 cup cashews
0.75 cup dates
75 grams (2.7 ounce) almonds with skin on
2 tbs desiccated coconut
0.5 cup fresh lime juice
Zest from one lime
110 grams (3.9 ounce) coconut milk
2 tbs coconut oil
2 tbs honey

1. Soak cashews in cold water for at least 8 hours but overnight is best;
2. Soak dates in warm water for 15 minutes and then drain the water before placing in blender or Thermomix (“TMX”);
3. Add almonds and desiccated coconut to the blender along with the dates and process until mixture resembles a fine grain;
4. Press the mixture into an 8 inch springform tin site or smaller individual tins. Push down firmly until it is well compacted and even. Put in the fridge to set;
5. Drain the cashews. Add soaked cashews to the blender along with the lime juice, lime zest, coconut milk, coconut oil and honey and blend on high speed for 1 minute. Scrape down the sides of the blender and then continue to blend on moderate speed for 2 minutes. The mixture should be a thick creamy texture;
6. Pour mixture into the base and spread evenly;
7. Store in the freezer and take out 30 minutes before serving;
8. Top the cheesecake with whatever topping you would like and serve;

▪ I soaked the cashews for 10 hours and found they were quite soft and easy to blend;
▪ If you use Medjool dates and they are already quite plump and juicy, skip step 2;
▪ If you are using a TMX, for step 3, process for 10 seconds on speed 9;
▪ The base can be made the day before and refrigerated until needed;
▪ If you are using a TMX, for step 5, blend initially on speed 9 for 50 seconds, scrape down bowl and then blend on speed 6 for 2 minutes;
▪ The cheesecake/s should be stored in the freezer so they can set. They won’t set if placed in the refrigerator;
▪ If you are making the small sized cheesecakes, best to get a tin that has removable bottoms. This makes it a LOT easier to remove each cheesecake:
▪ You can use lime or lemon zest, or toasted desiccated coconut, cherries, berries, passionfruit or whatever else you would like to top your cheesecake;
▪ You can also use a dash of Bailey’s in the mixture to add flavour though that will make it LESS HEALTHY;
▪ As these are GLUTEN & DAIRY FREE and have NO REFINED SUGAR, they are rather GUILT FREE!!
